First Co-op Meeting

Our first co-op meeting is today. I'm very excited for this opportunity for my children and also for myself!

Here's what the day will look like:

12:30-1:00 Opening Assembly
1:00 - Class 1 (Miss B is taking an American Girl class and GMan is taking a Math through Literature Class)
2:00 - Class 2 (Miss B is taking soap and candle making and GMan is taking Fall into Crafts)

What will I do during this time? I will be assisting during the first class - and that's a big part of the reason I'm so excited. My sweet friend, Hope, is teaching a Oceans and Continents class to Kindergarten and First Graders, and I will be her assistant. We have lots of fun songs, chants, notebooking activities, etc... lined up. What I love is that Hope just tells me what to do and I do it!

I look forward to sharing some of the things we will be doing - I have missed working with groups of children. My children are looking forward to making new friends and learning things from someone other than ME. I'll let you know how it goes!

Wednesday - What's for Dinner? Chicken Bites

Tonight's dinner is going to be simple, quick - and a favorite of both of my kids. My daughter, especially, likes chicken nuggets, and I like to make them where I know all of the ingredients that were used! Here is a quick recipe for chicken nuggets. I make green beans, cinnamon applesauce, and some crescent rolls to go along with them and everyone in my house is a happy camper!

Chicken Bites

4 boneless, skinless chicken breasts, cubed
1/2 cup mayonnaise
1 sleeve Ritz crackers

Toss chicken cubes in mayonnaise; roll in crushed crackers. Place on an aluminum foil-lined baking sheet and bake at 350 for 10 minutes. Turn and bake another 10 minutes or until juices run clear when chicken is pierced with a fork. Makes 4 dozen.
