Slow Cooker Italian Tortellini Stew

 

 Eating healthy has been our top priority in 2013.

{Do you know I've lost 16 lbs. since Jan. 1?} 

Encouraging my kids to try new foods, particularly vegetables, has also been a top priority.

Whenever possible I use my slow cooker.  It just makes life easy.  

This Italian Tortellini Stew is healthy, easy, and takes little time to make.   It takes 15 minutes to throw this in the slow cooker (usually right after lunch, when I'm already in the kitchen).   

One of my children is a very picky eater, so he likes the tortellini in this stew.   He ate an entire bowl of this, so that's a big success!
