Sweet Sunday - Homemade Reese's Peanut Butter Cups

I read the other day on a blog that having lots of healthy snacks on hand helps motivate kids in a homeschool situation. This just makes sense - my kids like to have crackers, fruit, granola bars, yogurt, water bottles, etc... at hand during the day. On my daughter's clipboard of daily assignments I will often write her a note that says something like, "Go pick your favorite snack from the pantry after you finish your math assignment." Just knowing there is a reward at the end is so helpful.

One of the things that bothered me about public school was the obvious inattention to nutrition and the effect that a good diet/adequate snacks can have on children. Having access to water during the regular school day seemed like a big issue, and even when they were allowed time at the water fountain it was for maybe 5 seconds. And let's not go into school lunches, etc... but, I digress. Today I thought I'd share a treat my children like. If I remember correctly, this is from the South Beach Diet, but I could be wrong. My children enjoy it, and I feel good about them having it because it is fairly healthy (they think it's a big splurge). My daughter calls them Homemade Reese's.

Melt a fudgesicle in the microwave for about 20 seconds. Remove from microwave and stir in a tablespoon of peanut butter and a couple squirts of whipped cream. Enjoy!
